personally, i'm not too picky about skate sharpenings. I tried the flat bottom v and i could barely tell much difference. I think at our level of skill, as long as the guy who's doing your skates isn't some highschool punk getting paid $8.50/hr, you're ok.
I usually go to cyclones because they do tons of sharpenings. I know the flat bottom v's available at some sportcheks, but i think it's slightly pricier to get that done. But like i said, personally, i don't think i'd be able to tell the difference if you gave me 2 pairs of skates sharpened with different methods. As long as you get the proper cut for your skating style and weight, you should be fine. I usually get the standard cut. I've tried the super deep cut but bites too hard and i tend to pk when i try to stop.
And i've never profiled my skates before. lemme know how you find it if you do yours
