so after watching this movie again last night with the subtitles on so i could actually catch what everyone was saying, i have a little to add to the whole hulk discussion.
i think hulk "losing control" in the helicarrier was all loki's doing. the spear was captured with loki (who was willingly captured) and banner grabbed the spear subconsciously. he was in complete control the entire time, even when he "lost" control and snapped at widow in india. i think loki's spear needed to be in close proximity of banner to exercise some sort of control even if it's just that little bit to bring his barriers down. why else would loki need to be on the ship?
i also watched the deleted scenes and there are two that support this theory somewhat. one has hawkeye talking to loki about the "new response team". loki asks about the members of the team and says something to the effect that he'd need to turn them all. perhaps he needed to be close to all of them to turn up the aggression and perhaps turn down the self control in them so they'd fall apart, as it definitely wasn't his plan to have s.h.i.e.l.d. use the tesseract to create those weapons of mass destruction nor to have fury keep them in the dark about it. rather, his presence (and perhaps some magical presence as well) turned up the heat a little and everyone lost control. that was his plan to defeat the team.
then the second deleted scene had the security guard that banner landed beside give him a "pep" talk on the hulk. he says something to the effect that "his mind has been made up" as to which way banner needs to go, and that the "rest" of him (which i could only assume he means his hulking body) will follow. this, along with his "i'm always mad" secret, suggests to me that banner figured out a while ago how to control and channel the hulk, even when he didn't exactly know it himself. the rage fest on the helicarrier made him second guess himself, but the wise old security guard put him back on track. that's why he showed up back at stark tower to rejoin the group.
i think stark knew all this too, which is why he kept provoking him, he knew that he wouldn't turn so he was just having fun with it.
anyway, that's my theory.
