so i just heard of a really really cheap snack that was used during the depression. it sounded funny so i think i'm going to try it.

get a slice of bread. toast it. apply some butter to both sides if you like. get two more slices of bread. put the toasted piece in the middle. there you have a ghetto bacon sandwich lol.

the buttered toast is supposed to simulate bacon. apparently back in those days bread was cut really thin, so if you toasted it enough, it might give a hint of bacon. it was on the radio this morning haha.

i know there's are lots of recipes online or in cookbooks, i ask you guys so i can get some favorites based on opinions/comments of people i actually know.

especially comments regarding preparation on recipes are sometimes deceiving, it'll say 15 minutes, but doesn't really factor in time to wash/cut/measure/marinate out all the ingredients etc... and some don't always explain well how to do specific steps or use some type of cooking lingo that i might not understand.

Here's a super easy side recipe that I've been doing:
Boursin Mac & Cheese (serves 4 as a side dish)
1 pkg Boursin Cheese (probably any type, i've used both garlic/herb and the shallot/chive one)
1 cup of Macaroni
1 cup of chicken broth
2 cups of water
2 diced tomatoes (small)
1/4 tsp Salt
Pepper to taste.

Boil the chicken broth and water, add macaroni once boiling. Boil the macaroni till desired tenderness (8-10 minute).
Remove and strain macaroni, but keep about a 1/4 cup of the macaroni water. Throw in the the package of cheese with the water and the macaroni back in the pot and on low heat mix it until the cheese is fully melted. Now add the tomatoes. Feel free to add in the diced tomatoes. Add a bit of salt and pepper to taste.

You can also add some prosciutto too for a "meatified" version.

Add'l Notes: If you find it too rich or the sauce to thick with the full package of cheese, feel free to use 3/4 or a 1/2 of the package.

the dish is quite rich and probably not what i would call a "healthy" dish. but basically as easy to make as "KD" and much better tasting.

an easy recipe that has been in my family for years.

1 vehicle
1 small amount of money
1 driver's license
1 voice

get into vehicle. with your license to drive, drive yourself to the nearest fast food drive thru. wait patiently in the line up. look at the menu. decide what you'd like to eat. speak loudly and clearly into the box when prompted. drive ahead to pick up window. pay the man. get food. eat. repeat if necessary.

np. i thought i'd throw it in there just in case.

do you like cheap and easy noodles? one thing that ben used to make when we were in high school was this noodle thing that was pretty dang good and super easy (unless you catch a towel on fire, which we did once).

get those vermicelli noodle but the chinese kind. they're usually in a round nest type shape. usually 6 to a pack. usually brown.
boil the noodles until soft to your desire. drain the water. keep the heat on and put in some oyster sauce. mix up well. and there you have it. badass noodles.

Here's another simple one:

TUNA CUTLETS

2 cans tuna - drained
¼ cup onion - minced
~12 crushed soda crackers (~½ cup)
2 small eggs
salt

Combine all ingredients and make patties. Shouldn't be too wet. If it is, then add a couple more crushed crackers. Cook in hot oiled frying pan until golden brown - probably around 5 minutes/side.

The first two you can make a big batch and freeze in portioned sizes. Just heat up (and add veggies for the second one) and serve with rice.
